Sepia, brick color. On the nose, sandalwood, clove, parsnip, and dry leaves. On the palate, black pepper, coffee grounds, leather, and rich malt. This rare whiskey was bottled under the strict tenets of the Bottled-in-Bond Act of 1897. Aged in the temperate climate of the Northern California coast, the original distillate was altered only by the addition of pure water from the Russian River Valley aquifer. This is the purest expression of Redwood Empire's craft.

Buttery and soft on the nose, with a hint of pancakes and maple syrup, clove, and brown sugar. A smooth palate offers peanut brittle, French toast, vanilla ice cream, and orchard fruits, balanced against peppercorn spice and subtle oak. The finish is long and creamy, bringing out maple syrup sweetness, milk chocolate, and a light touch of red fruit, set against oak and earthiness. The smoothness and balance are noteworthy.
